 NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes...and love getting recipes you would like to share!

We spent the last week on a fabulous road trip with our daughter and grandson... visiting the Black Hills, seeing Jewel Cave for the first time, hiking in Colorado Red Rocks, Pike's Peak, Denver Broncos stadium, friends in Denver, family in Colorado Springs... a good time was had by all.

RECIPE OF THE WEEK

It seems time to share this simple summer staple again... picked up at The Mucky Duck Restaurant in Captiva, Florida by a member of our Breakfast Club.

FROZEN KEY LIME PIE

  • 1 can sweetened condensed milk
  • 1/3 cup key lime juice
  • 3 beaten egg whites
  • Graham cracker pie crust

Fold key lime juice into milk, then fold in 3 beaten egg whites. Pour into graham cracker pie crust and freeze overnight.
