Wednesdays Unplugged - Fern's Carrot Bars

 NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes...and love getting recipes you would like to share!

We went up to North Dakota on Monday to deliver the cross our son has been working on for the last 3 years since my mother died. Our son and my husband hung it on the face of East Walle Lutheran Church in memory of my parents. My uncle, cousins and our daughter were also there giving support in the chilly and windy rain that was filled with love and warm memories.

Pumpkin bars
A visit to North Dakota isn't complete without the home cooking of my Aunt Fern and this trip was no exception. We didn't get her famous Kirby Puckett brownies this time, but she did serve her carrot bars which Kirby took home with him one year in the full pan! (She always brought goodies for the Twins to the nearby radio station when they came to town.) I love this hand-written recipe, well worn and well used... and marked (Good).
