Wednesdays Unplugged - Dutch Baby

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes...and love getting recipes you would like to share!

We had a grandkid sleepover last weekend... it involved playing with indoor sand, shooting hoops at ChuckECheese's, and the last 5th grade football game of the season.

RECIPE OF THE WEEK

Breakfast for dinner is always a hit and we recently tried a new recipe... Dutch Baby.  It's not really a pannekoeken, but is sort of like it. The recipe called for bacon but that was my least favorite part, I thought the taste of bacon grease was too prominent... would probably leave it out if I made it again. My husband loved it, the rest of us thought it was 'ok'.  I personally prefer the lighter 'Dutch Puff' in the related posts below, but this is heartier.

DUTCH BABY

  • 1/2 cup flour
    Dutch baby
  • 1/2 teaspoon salt
  • 1/2 cup milk, preferably whole milk
  • 4 eggs
  • 3-5 slices bacon, chopped (optional)
  • 1/2 cup shredded gouda cheese (optional)

Preheat oven to 425 degrees. Spread out bacon in a heavy-bottomed oven-safe 8-10 inch frying pan, and place in the oven while it heats.

Meanwhile, whisk together eggs and milk until well blended, then add it to the flour and salt a bit at a time. Mixture will be a very thin liquid. Stir in shredded cheese.

When the oven is hot, take out the pan. If the bacon fat does not cover the bottom of the pan, add a bit of butter to make sure the whole pan is greased.

Pour in the batter, place back in the oven and bake for 20-25 minutes. Serve immediately, the longer you wait the flatter it gets. Top with a bit of powdered sugar, maple syrup and/or plain greek yogurt.
