Wednesdays Unplugged - Crockpot Buffalo Chicken Tacos

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes...and love getting recipes you would like to share!

Last week was a special week... we celebrated our daughter-in-law's birthday on Wednesday... then our daughter's graduation on Thursday!

RECIPE OF THE WEEK

Our daughter-in-law picked her usual cider stew meal... and I also made crockpot buffalo chicken, which made great tacos and buns.

CROCKPOT BUFFALO CHICKEN TACOS

  • 2 1/2 pounds chicken breasts
    Buffalo chicken tacos
  • 1/2 teaspoon salt
  • 12 ounce bottle of Frank's wing sauce
  • 1 ounce packet of dry Hidden Valley Ranch mix
  • 2 tablespoons butter
  • 1 package flour tortillas
  • Shredded lettuce
  • Shredded cheese
  • Chopped tomatoes

Place chicken in a 1 1/2 quart slow cooker, sprinkle with salt.  Pour the bottle of wing sauce over the chicken and sprinkle the packet of ranch mix over the wing sauce. Place the lid on the crockpot and cook on low 4-6 hours, until meat shreds easily.

Shred meat between two forks, add the butter and cook on low for another hour or so so the meat can soak up the sauce.

Serve as a buffet, allowing everyone to assemble their own tacos (or buns).
