Wednesdays Unplugged - Chocolava Cookies

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes...and love getting recipes you would like to share!

Don-bday
We are in the midst of our family birthday marathon and this week we invited my cousin to join us since it is his birthday tomorrow. Last weekend we had a sleepover which involved dinner at Snuffy's and Lego and 'sand' building time.

RECIPE OF THE WEEK

This week's recipe is from prevention.com... thought the cookies looked good, then found they are diabetes-friendly treats that don't send your blood sugar soaring... another good reason to try them. They are soft in the middle, very chocolate-y, but not too sweet... my kind of treat.

CHOCOLAVA COOKIES

  • 1 1/3 cup flour
    Chocolava cookies
  • 1 cup white sugar
  • 1/3 cup brown sugar, packed
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup butter, softened
  • 3 large egg whites, lightly beaten
  • 1 teaspoon vanilla extract
  • Confectioner's powdered sugar, for coating

Preheat oven to 350 degrees F. Combine flour, white and brown sugar, cocoa, baking powder and salt. Stir in butter until mixture is well combined and crumbly. (Can use food processor or mixer.) Add egg whites and vanilla extract, mix just until dough comes together.

Place a little confectioner's sugar into a shallow dish. Roll dough into 1 1/2" balls, then roll balls in confectioner's sugar to coat. Place 2" apart on baking sheet coated with cooking spray. Bake 12-14 minutes, until just set around the edges but still soft in the middle. Transfer to rack to cool.
