NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes...and love getting recipes you would like to share!
This week was our daughter-in-law's birthday and she got plates to expand the place settings of the china that used to belong to my husband's mother... pretty cool. But what was really cool was the great article in Lille News about her... Parkview Center Shool librarian to serve on the Caldecott Medal selection committee Congratulations, Laura... we are proud of you!
RECIPE OF THE WEEK
It seems only fitting that Laura would select a recipe from a children's book for her birthday meal. The dessert she chose was from A Fine Dessert, a picture book about 4 families in 4 different cities in 4 different centuries making the same dessert... the same dessert that became Laura's birthday dessert. Very simple and surprisingly delicious... basically fruit and whipped cream. It would also make a good topping for angel food cake or meringues.
BLACKBERRY FOOL
- 2 1`/2 cups fresh blackberries
- 1/2 cup sugar, divided in two
- 1 teaspoon vanilla
- 1 1/2 cups heavy cream
Mash the berries with a potato masher or a large fork. If you've got a food processor you can use that. With clean hands, press the crushed berries through a sieve to remove the seeds. Sprinkle the fruit with 1/4 cup of the sugar. Stir.
In a separate bowl, mix together the remaining 1/4 cup of sugar, the vanilla and the cream. Using a whish or whatever kind of beater you have, whip the mixture until is makes soft peaks, but not stiff ones.
Fold the sugared berries into the whipped cream. Taste it to see if it's sweet enough. Add more sugar if you need it. There should be streaks of white and purple.
Refrigerate for 3 hours or more.
Eat! And don't forget to lick the bowl!
