Wednesdays Unplugged - Baked Brie with Dried Fruit

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes...and love getting recipes you would like to share!

Spelling bee
We have been getting back into the holiday concert and theater mode again this year... running the gamut from a Gregorian advent processional to musical theater to Trailer Trash Christmas to choral concert. We went to a production of The 25th Annual Putnam County Spelling Bee presented by The Chameleon Theatre Circle last weekend... very fun! My husband knows two of the cast members, and we found out just before we went that our son knows the director... small world!

RECIPE OF THE WEEK

This week's recipe is from a Breakfast Club friend, who got it years ago from the wife of one of the doctors she used to work with. It's super easy and delicious.

BAKED BRIE with Dried Fruit

Brie appetizer

  • 1 small wheel brie, about 6 inches
  • 1/3 cup melted butter
  • 1/3 cup brown sugar
  • 1 package assorted dried fruit, chopped
  • Craisins or dried cherries
  • 1/3 cup toasted almonds

Place brie in a pie or quiche plate, top brie with dried fruit.  Melt butter and brown sugar together and pour over brie and fruit. Top with toasted almonds.  Bake in oven @350 for about 25 minutes or until soft.  When finished, cut 4 slits in top of brie and serve with fruit, crackers, or a thin sliced baguette.
