It was an amazing time, and now I’m back, feeling refreshed, rejunvenated, and ready to share some amazing new recipes with you! With Cinco De Mayo approaching fast, I’ve put a sweet and spicy twist on a classic fresh salsa, to spice up your Cinco De Mayo festivities. My watermelon salsa is an awesome way to do something new in the salsa department, instead of serving the same old pico de gallo. I combine juicy watermelon with fresh cucumber, basil, onion and lime juice to create a sweet and tangy salsa that’s the perfect side dish for grilled fish, chicken, seafood or even just to top some tortilla chips!

I used my FLOW board to cut up the juiciest of fruits…watermelon! It works perfectly, the excess juice from the watermelon drains right into the tray, where it stays until you decide to save it, or rinse it down the drain.

Now, let’s make salsa!
2 cups finely diced seedless watermelon1 cup finely diced cucumber
1 jalapeno pepper, seeded and diced
2 tablespoons lime juice
1/4 cup chopped fresh basil
1/4 cup minced red onion
2 scallions, chopped (green parts only)
salt and pepper, to taste
Place watermelon, cucumber, jalapeno, lime juice, basil, red onion and scallion in a medium bow, and stir well to combine.
Season with salt and pepper to taste.
Serve at room temperature or chilled.
