Waging the war against a fussy eater with these

My determination to wean Baby Girl from her Raisin Toast addiction (correct that would be breakfast and dinner, yes) has led me this morning to the kitchen. I know she needs some variety in her diet, I recognize that she is a fusspot foodie and I acknowledge her stubbornness BUT I am committed to winning the war.

It’s been said that for a child to ‘try’ a new food, you may need to present it on their plate a dozen times Well, with some foods, we’re up to at least plate offering 22,345 and she is proving to be just as pig-headed as me. I mean, seriously, what 2 year old says “I just don’t eat that!” Ummm, she does and it is frustrating beyond words!

Time for a new offering – “Dinner Cupcakes” – well that’s what I shall call these individual Zucchini and Ham slices.

This isn’t my recipe (I’m not that clever, really) and it is sourced it from here, a super site where you can also spy many other wonderful dishes that look simple enough for even me to make!

Ingredients you’ll need:

  • Zucchini x 2 – grated
  • Carrot x 1 – grated
  • Chives – dried or chopped (the original recipe calls for cooked onion but I am lazy)
  • Pumpkin – cup finely sliced BUT you could use a mixed cup of veges or a cup of corn
  • Flour x 1 cup
  • Ham – finely chopped – 100g
  • Oil – 1/4 cup
  • Cheese – grated 1 cup
  • Eggs x 4 – lightly beaten

The doing bit:

  • In a bowl mix together grated carrot, zucchini, chives (or onion) cheese, slice pumpkin (or other veges) – stir thoroughly to ensure they are well mixed
  • stir through the cup of flour to evenly coat all the ingredients
  • in a smaller bowl lightly beat the eggs and add the oil
  • mix the wet ingredients with the dry and stir through until well mixed
  • use a greased tray or muffin tin to bake for approximately 30 – 40 mins in a 180 degree oven

Making them in the muffin tray creates a prefect individual serving size and these will be fantastic in the big boys’ lunchboxes to. I think it’s a winner!
