Veggie-Tastic!

Guys. I might not have had a single fruit today, but I definitely made up for it in veggies.

After I posted this afternoon saying that I was feeling great and everything was hunky-dory, I took a turn for the worst. I’ve been so lethargic this afternoon that I’ve been on the verge of falling asleep. Even while talking on the phone with Max.

Snacks

I was a hungry hungry beast! My first snack was some frozen stir-fry veggies simmered in TJ’s Green Curry Simmer Sauce.

This was delicious and quick. I’ll definitely be recreating this one.

And about an hour or so after my curry veggies I had these…

Really really long celery sticks with a little organic peanut butter.

Dinner

I’ve had the worst headache since 5pm. I figured it was a hunger headache so I made an early dinner.

I cooked 4 little chicken tenders in evoo, water and topped with salt and pepper. Then I steamed some broccoli in the left over chicken evoo-water.

I splurged and had a little Sierra Navada Porter Honey Mustard for dipping. Holy sweetness.

I didn’t have my dark chocolate today so I filled that healthy guideline with honey.

Cooking the chicken this way leaves it so moist and tasty.
