Raita is a side dish which serves with pulao or biryani. For this recipe, you have to mix the chopped vegetables with whipped yogurt and spices. In raita, yogurt may be seasoned with roasted cumin, black salt, chaat masala, black pepper, red chili, mint powder, and other herbs too. There are so many variations available in raita or yogurt like boondi raita, cucumber raita, anar raita, vegetable raita, mooli raita and more. We always prefer to add milk in curd to adjust the thickness which makes raita creamy and delicious more instead of adding water.
Preparation Time: 15 Minutes Cooking Time: 0 Minutes Servings: 4 Category: Curd/ Raita Ingredients: 4 Cup Fresh Yogurt 1/2 Cup Cucumber, peeled and chopped 1/2 Cup Onion, chopped 1/2 Cup Tomatoes, chopped 1/2 Cup Boondi 2 Tsp. Green Chili, finely chopped 2 Tbsp. Green Coriander, finely chopped Salt to taste Roasted Cumin Powder to taste Red Chili Powder to taste Black Pepper Powder to taste Instructions: Beat the yogurt until to smooth or use muslin clothe for this. Add chopped onion, tomatoes, cucumber, chili and green coriander in yogurt. Add boondi and spices except salt and mix well. Add the 1/2 Cup of water to adjust the consistency of raita and add salt. Chill and serve. Notes: Add the salt in raita at last (serving time) otherwise it will be sour. Add little milk instead of water which gives creamy texture to raita and makes delicious. Adjust the spices as per taste.
