Unwinding (+ a Winner!)

Gosh, this week flew by.  It was a good one, but so exhausting!  I’m in the throes of midterms- and will be through the next couple weeks of Spring Break (more on that later!) and into April.  This afternoon, I watched a couple episodes of Parenthood (season 2) and took a long, luxurious nap.  It was glorious.

B and I recently wound down a weeknight with Ilena over yuca fries and arepas at our favorite spot.  I could eat this meal every night… but I’m trying not to get sick of it!

I shared my favorite new quick-service vegan café with B last week.  We met after class, and ate the best “tuna melt” (made with chickpeas + Daiya).  We also had a buffalo “chicken” sandwich that was good, too, but the tuna melt is what I fantasize about.  I wouldn’t call it “health food,” but it is damn delicious.  Lordy lord.

I took the morning off and got my hair colored at BbU for the third time.

Here’s what it looked like before: dyed very close to my natural color- I couldn’t actually tell the difference.

After: not quite “ombre;” they called it “beachy” and tried to keep it looking somewhat natural.  It’s pretty similar to what it looked like the first time I ever colored it.  I like it!  I also finally took the plunge and ordered Bumble and bumble’s special shampoo+ conditioner for color-treated shampoo… it hurt my bank account, but my hair felt really dry without it.

B’s been away all week (back tonight!) but I’ve been making do.  I met friends for dinner a couple times, and cooked a big pot of red lentil soup (from the Conscious Cleanse) and brown rice with leeks.

I also made the Conscious Cleanse’s decadent raw brownies the night before B left, and we both really liked them!  I added salt, vanilla + cinnamon to them, and they tasted a lot like my Mexican Chocolate Balls (which I must make ASAP!).

I’ve been hitting the cheese hardcore.  My favorite sandwich right now is mozzarella + mango jam… you must try it.  Make sure you toast the bread and cheese so it’s good and melty, and then slather on a thick layer of jam.  Also delicious?  Apples + cheese.  My mom used to make me a big snack plate with chopped carrots, celery, walnuts + raisins, and a good amount of apples + cheddar, too.

I’ve also started “night eating” again.  I’ve had a lot of trouble sleeping, lately… Daylight Savings Time, school + internship anxiety, general life… sometimes it sneaks up.  I took Ambien on-and-off for years, but have been off it for a while… I reacted really strongly to it and almost always hallucinated.  Crazy stuff.  So now I just get up and eat a bag of veggie sticks then go back to bed and stare at the ceiling.  So it goes.
