Is there anything better than tzatziki sauce? As a gyro fanatic, I’d argue that the best part of the gyro is that tangy, garlicky yogurt sauce that smothers the meat and veggies.  Gyros are my favorite street food, but they’re so easy to make at home too!  My tzatziki sauce is simple to prepare, yet complex in flavor.  And it’s not just for gyros! Serve this delish sauce with a veggie platter, or grilled chicken, fish or lamb.  Since it’s yogurt based, it’s a guilt-free topping that adds a zesty kick to any dish!

ingredients
1 cup plain Greek Yogurt
1 teaspoon lemon juice
1 small cucumber, seeded and shredded
1 garlic clove, grated
1 tablespoon finely chopped fresh dill or 1 teaspoon dried dill
1 tablespoon of chopped fresh oregano or 1 teaspoon dried oregano
1 tablespoon extra virgin olive oil
Kosher salt and black pepper to taste

Cut the cucumber in half, and use a spoon to scoop out the seeds.  Shred the seeded cucumber using a grater or food processor.  Spoon the grated cucumber onto a sheet of paper towel, and squeeze out all the liquid you can.

Combine all the ingredients, then season with salt and pepper to taste.  Refrigerate the tzatziki to sit for at least 1 hour, so that the flavors can marry.
