My Treat Petite co-host Stuart at Cakeyboi started things off with this beautifully bright Summer Trifle. A healthy treat using low fat yoghurt, fruit and sugar free jelly. A great way to celebrate Independence Day!

Our first entry was from Helen at Family Friends Food. She made Vegan Gin & Gooseberry Jelly. This grown up treat was made using seasonal fruit, and jelly is a perfect cool snack for hot days.

Kate at The Gluten Free Alchemist made these gorgeous Gluten Free Courgette & Cherry Cupcakes with Cherry Cream Cheese Frosting. I love the gorgeous purple red of the cherries! Kate's daughter had no idea these contained courgette, so they are a great way to sneak veggies into your children's food.

I made these Elderflower Cupcakes earlier in the month for a charity event at work. I had fun using a new silicone mold to make the flowers, and as I'm a big fan of elderflower they tasted really good too!

Kerene from I Am The Dream Baker made Chocolate Coated Shortbread Cookies, she has been enjoying these with an ice cold drink whilst watching the World Cup!

Laura from I'd Much Rather Bake Than... made this gorgeous red Strawberry Daquiri Traybake. Nothing says summer like strawberries and Laura describes this bake as 'a lagoon of strawberry heaven'!

Janine from Cake of the Week had some fun with fondant and made these Pina Colada Cupcakes complete with pink flamingos! Janine also showcased some of her postcard collection in the post.

Choclette from the Chocolate Log Blog sent us these perfectly golden Red Gooseberry Buns. I've never seen red gooseberries before, I love their summery appearance! Choclette grew these herself in her garden.

Kerene from I Am The Dream Baker sent in two connected recipes - Homemade Ladyfingers and Tiramisu. She had not made Ladyfingers before, but I think her first attempt came out perfect! And she used them to make a classic 'no bake' dessert which looks delicious and decadent!

I was really impressed with Elizabeth at Elizabeth's Kitchen Diary's Chocolate Orange Campfire Cakes. She made these to celebrate her husband's birthday while camping in the Lake District. Such a clever and resourceful idea!

Our final entry of the month was Raspberry & Coconut Mousse from Jasmine at Self Sufficient Cafe. Such a beautiful and vibrant colour! And they are vegan friendly too!
