Lemon Bar Recipe
I am doing a series of gifts to give for Mother's Day, and one of the first gifts I am sharing is the gift of deliciousness! This recipe for Lemon Bars is completely scrumptious, and I should probably run an extra 2 miles a day just for baking these bad boys. I can't wait to share this yummy treat!
List of Ingredients:
- 1 cup of butter softened
- 2 cups of white sugar (separated to 1/2 cup, and 1 1/2 cups)
- 2 1/4 cups all purpose flour (separated to 2 cups and 1/4 cup)
- 3 large fresh lemons, juiced
- 4 eggs
- 1/2 cup powdered sugar to sprinkle over the top when cooled
First preheat your oven to 350 degrees. In a medium bowl, blend together 2 cups of flour, 1/2 cup sugar, and softened butter. Press this into a 9" x 13" pan. Bake for 15 - 20 minutes or until this is firm and golden. While this is baking, mix together the remaining 1 1/2 cups of sugar, 1/4 cup of flour, and whisk in the lemon juice and 4 eggs. Pour the lemon concoction over the baked bottom and place back into the oven for another 20 minutes. The Lemon Bars will firm up as they cool. After they have completely cooled, sprinkle the powdered sugar over the top, and cut into desired size pieces. Enjoy your yummy new Lemon Bars!
