Thai Cucumber Salad

Thai cucumber salad is a fresh and flavorful side dish that is great for any summer picnic or BBQ. It pairs well with most main dishes and will not spoil if left out in the sun. Give your taste buds an exotic burst with this easy Southeast Asian dish.

Directions:

In a strainer, peel and cut 1 1/2 large cucumbers into thin slices.

Add:

½ TBSP Salt

2 TBSP Chopped Cilantro

Toss.

Leave in the strainer to drain in the sink for 30 minutes.

Rinse with cold water, then drain again.

Pat dry with paper towels.

In a small bowl, mix together:

½ cup white sweetener

¼ cup rice wine vinegar

Mix until the sweetener has completely dissolved.

Add 1 small jalapeno pepper (optional), seeded, and chopped.

ADD the vinegar with sweetener mixture

2 TBSP Cilantro

¼ cup chopped peanuts (optional)

Toss to combine and serve chilled.
