Taco Tortilla Lasagne

If you’re reading this, you’ve probably been captured by the title. How good does that sound?! *yummy noises*

I’ll be honest; I haven’t tried this yet, but I’m definitely gonna give it a go! I was flicking through one of my old recipe books the other day and saw it, and I knew that I had to share it with you guys! I certainly didn’t create this dish myself, and I’m not sure where I got the method from, so if you’ve seen this elsewhere please feel free to comment with the website link!

First off, you need to set your oven to GM 5 – I’m not sure about F & C and I’m feeling way too lazy to look it up!

450g ground beef                                90g strong cheddar, grated
1 packet taco seasoning                        1 large tomato, with seeds removed and finely sliced
8 inch flour tortillas                            
160ml water (hard to come across, I know!)
226g salsa

And then you’ll need whatever it is that you usually put with a taco, such as lettuce etc.

First you need to brown off your beef and drain all the grease away. No one likes a greasy meal… apart from McDonalds. Then add your taco seasoning and water to the beef and cook for around 5-6 mins over a medium heat. Don’t forget to keep stirring it though, you don’t want it to stick to the pan! (Unless you’ve got it in for whoever’s washing up)

Then grease a large tin/pan and place two tortillas on the bottom – if you’ve got a square pan cut them to size. Layer half of your meat mix on top of the tortillas, then add half of the salsa and a third of the cheese, then more tortillas, more beef, more salsa, more cheese, more tortillas and finally sprinkle the remaining cheese over the top! Arrange the sliced tomato on top of the cheese if you want, but I’d skip this step because I don’t like cooked tomatoes. (weird?)

I bet it looks good already, doesn’t it? For the final step you need to bake it for about 25 mins – the cheese should be nice and bubbling brown

And now grab yourself a portion and serve with the usual taco fixings!
