And for all of you wanting a summer treat, here’s a recipe for Watermelon Sorbet from my Wicked Green Smoothies blog.Summer is the perfect time of year for lighter fare. I don’t know about you but I don’t want a hot meal when it’s hot out. And baby, here in North Carolina, it’s hot and humid! Sorbet is a favorite summer refresher.
Watermelon is one of my favorite summer fruits sooo, put them together in sorbet!
Watermelon Sorbet
make a simple syrup – half sugar, half water
1/2 c. water
1/2 c. sugar
bring to a boil
Add a tbsp. of fresh-squeezed lime juice or throw a slice of lime and simmer for a minute Let cool, remove lime slice
Cut up watermelon into chunks. You’ll need about 8 cups.
Throw it all in the food processor and process until smooth.
Pour in rectangular backing dish and freeze about 4 hours, stir every hour.
When frozen, pop it back in the food processor in batches and pulse. Serve and sigh in pleasure!
