Holidays are always associated with excellent food and great desserts that are very caloric. This year BeLiteWeight wants to be like Santa Claus and magically change your fears about dieting by giving you a healthy recipe for Celebration cupcakes! They not only look fabulous but also taste really delicious. These cupcakes will delight your guests and leave you guilt free. This dessert is an actually healthy alternative to a real special treat.

Ingredients (Makes about 5 Cupcakes)

3 Eggs

3 Tbsp powdered low calorie sweetener e.g Erythritol

1 Tbsp butter

1/3 Cup almond flour

1/5 Tbsp n baking powder

Low carb chocolate chips (on top)

Avocado mousse (trust us!! you will be pleasently surprised😉)

1 Large avocado

2 or 3 Tbsp cream cheese

1 Tsp peanut butter

1 Tsp lime peel

Half a lime juice

1/3 Cup monk fruit sugar

Cupcake Preparation

1. Preheat oven to 360 F

2. Mix eggs with erythitol

3. Combine the rest of the ingredients (except the chocolate chips)

4. Using a spatula, place the mix into the muffin sheet or cupcake liner

5. Put in the oven for 10/15 minutes (check with finger to see if it is hard enough)

Avocado Mousse Preparation

1. Mix all listed Avocado Mousse Ingredients

2. Place the mousse in a piping bag (or use plastic bag and cut a small hole at the end)

4. Spread the mousse over the top of the muffins

5. Sprinkle chocolate chips on top!
