Spanish Chicken & Potato Stew

I’ve only myself to cater for tonight for dinner and I decided rather than just picking something up I’d just make a dish with whatever I had in the kitchen. And this is a taste of espania in my little Irish kitchen. I love the paprika im this dish and I had mine with some onion bread I picked up the Maritime Festival yesterday. Oh, and a glass of wine! This serves two, so I could have leftovers ♡

Heat a little oil in a saute pan and fry off two diced chicken breasts. Cut one red and one white onion into wedges and once the meat is browned add the onion to the pan. Add one sliced red pepper with two teaspoons of smoked paprika and a bay leaf. Empty in a tin of cherry tomatoes and about 200ml chicken stock. Simmer over a medium heat for about 20 minutes or until the potatoes are softened. Add a handful of frozen peas, a squeeze of lemon and eat!
