Of all the things I love making in a slow cooker, pork shoulder has to be my favorite. The moist, low and slow heat of a slow cooker was meant for tough cuts of meat like pork shoulder. Smothered in a flavorful marinade and cooked until melting tender, my slow cooker carnitas are a thing that dreams are made of. Luscious fall-off-the-bone pork, flavored with garlic, onion, orange and spices; doesn't that sound amazing? This tender, shredded pork is great for anything from sandwiches, quesadillas, tacos and more. Make this is on a Sunday and you can eat delicious carnitas all week long!
One 4-5 pound pork shoulder
1 1/2 tablespoons kosher salt
2 teaspoons ground black pepper
1 tablespoon ground cumin
2 teaspoons dried oregano
1/4 cup orange juice
5-6 garlic cloves
3/4 cup diced onion (about 1/2 an onion)
Add the onion, garlic, dried oregano, cumin, salt, pepper, and orange juice into a food processor or blender. Process to form an aromatic paste.
Pour the marinade all over the pork shoulder.
Place the pork shoulder into the slow cooker, then cook on low for 8-9 hours or 6-7 hours on high. When it's done, remove the pork shoulder from the slow cooker and shred it with 2 forks. Remove any bones, cartilage and fat.
