Slimming World 0.5 Syn Brownies

Hi friends. I’m currently sitting in a room filled with the delicious smell of warm brownies and I thought it would be the perfect time to share this recipe with you! This is a slimming world recipe (0.5 syns per brownie on all plans), but obviously it’s not a rule that you have to be on the plan to eat these… Even if it was, rules are made to be broken ;)

60g cocoa powder
70g splenda

6 eggs
1 tsp vanilla essence

About the splenda situation… if you can’t stand the taste of sweetner in your tea I’m afraid these brownies are not for you. They have a very obvious ‘sweetner’ taste to them and, from what I can tell, there’s no way around that. I like sweetner but I will admit that the after taste lingers a bit more than I’d like, so I’d advise you to have these with a sweetner free cup of tea or coffee! Anyway, let’s get on with it – I do love a ramble.

Set your oven to 180c and line your baking tin. Seperate the egg whites from the yolks and then whisk the whites until they form soft peaks. I had to do this by hand and it took a good 10 minutes of elbow grease!

Phew! Set the whites aside and whisk your egg yolks with the cocoa, splenda and essence – you’re gonna need a pretty big bowl for all that splenda! The original recipe I found called for 150g but that’s way too much in my opinion! 70g is plenty.

It gets pretty hard to mix so add a little of your egg white if needs be. Not too much, just enough to make it easier to mix together. When your happy it’s thoroughly mixed you can then fold in your much laboured over egg whites, pour in the tin and bake for 25 minutes. When the brownies are done leave them to cool in the tin for a little while and then cut the slab into squares – done!

They don’t rise like a normal tray bake would because they don’t have any flour in them, but if we were to add flour we’d have to add syns and that’s not the goal! I don’t think these brownies are something that you’d be able to make on a regular basis simply because of the amount of splenda used – I bought a 125g box for £2.50 (and that was on offer!) and over half of it’s gone after just one batch! They’re still a yummy substitute when that chocolate craving kicks in… I’d much prefer a Reese’s bar though ;)
