It's another 5 Ingredient Friday and with summer in full swing, the farmers markets are loaded with local produce perfect for plunking into this slender vegetable dip.
I wish I'd thought to conjure up this recipe last week before I sent off my weekly newsletter with a collection of my favorite vegetable dips and salad dressings because this spicy version now tops my list. Especially because I can whip it up in my Magic Bullet in seconds since it contains just a handful of ingredients.
Grandma Karen turned me on to jicama a few years back and I hunt it down whenever I'm at the market. The jicama is the white vegetable sticks you see next to the carrot. I love its super crunchiness and delicate flavor.
The base of this slender dip is non-fat Greek yogurt and low-fat cottage cheese, so I have plenty of calorie room to add healthy avocado. After I add a handful of parsley and a drizzle of sriracha, I'm ready to serve this colorful plate of crudité.
I wish I was one of those folks who can eat their veggies sans dressing, but that's not my style. I can't resist dipping my vegetables into a few tablespoons of something delicious. At 30 calories per serving, I can enjoy this slender vegetable dip to my heart's content.
If I'd had cilantro on hand it would have been a better match. Next opportunity I'll be using cilantro in place of parsley, along with a splash of lime juice to perk things up!
