Every Wednesday I stop by a tiny farmers market on my way home from work. There's only one fruit and vegetable booth, but the vendor always has a nice variety to choose from.
This week's offerings included very ripe apricots, perfect for a 5 Ingredient Friday super easy dessert recipe.
I picked the softest apricots I could find so they would whip up completely into a brick of softened cream cheese. My little hand mixer does a good job, so I didn't bother taking out a stand mixer.
After folding in whipped topping and a teaspoon of vanilla, my dessert was ready for a chill in the frig. You could add a few teaspoons of sugar or a packet of stevia if you like, but I found the apricots plenty ripe enough to lightly sweeten the cream cheese. Along with whipped topping the mixture was plenty sweet enough.
The 3o minutes it took before serving was tough to wait out, though you know I did some taste testing just to see if I could spoon my creamy dessert into bowls yet.
