Sometimes, without noticing, I try to do it all. And then I get frustrated when things don’t work out. So in the spirit of accepting small failures and embracing R&R, I made things easier on myself this week.
On the one hand, I gave myself permission to spend $4 on a store-bought breakfast (cold, chocolate chip oatmeal from my local grocery store) instead of eating a hurried breakfast at 6:30 AM. My mom was able to drive me to work; I arrived early with 20 minutes to spare and lingered over my meal on a nearby stoop.
On the other hand, I planned ahead early in the week and made a giant salad to last me three lunches.
In the mix:
- 1 box baby kale
- 1 box baby arugula
- blueberries, foraged
- raisins + goji berries, soaked in water for extra plumpness
- yellow + orange bell pepper
- yellow tomatoes
- kalamata olives
I kept it in a big bowl in the fridge, covered with damp paper towels to preserve its freshness. Each day I just packed a heaping portion into a container to bring to work, and drizzled it with salad dressing when I was ready to eat lunch. SUCH a timesaver!
Green Giant also made my life easier this week when they sent me a box of their new line of Seasoned Steamers.
They’re frozen veggies tossed with oil and herbs, and only take 5-7 minutes to microwave right in the bag ( although I usually prefer not to microwave plastic).
After the gym one day, I dug into a bag of brussels sprouts with sea salt and cracked pepper. I started with just one portion, but once I tasted them, I couldn’t stop and found myself finishing the whole bag! I really enjoyed them and would definitely keep these on-hand in the freezer.
Another simplifying treat I tried? Skinnygirl margaritas. I know what you’re thinking: 1) a margarita in a bottle? and 2) the name? and 3) a Bethenny Frankel product?! LVP, what ARE you thinking? Well, after rave reviews from some of my closest friends, I decided to try it for myself. I muddled up some (foraged) blackberries and (homegrown) basil, added ice, and poured. And guys: I didn’t hate it.
