Savory Spinach Salad with Figs and Goat Cheese

For my Food of the Month, I featured delicious figs and provided you with wonderful recipes I found from Meal Makeover Moms. As promised, I came up with a simple recipe of my own. Try it and enjoy!!

Savory Spinach Salad with Figs and Goat Cheese

RECIPE: Savory Spinach Salad with Figs and Goat Cheese Ingredients:
  • 2 – 3 cups raw baby spinach
  • 1/4 cup chopped pecans
  • 8 figs, quartered
  • 2 oz goat cheese
  • 1-2 strips of turkey bacon, crisp from skillet (drained and chopped into “bacon bits”)
  • 1/2 vidallia onion
  • Balsalmic vinaigrette (make your own or try this simple recipe)
  • 1 tsp olive oil
  • vegetable broth (enough to keep onions from drying out / sticking to pan)
Saute onions in a tsp of olive oil and vegetable broth until translucent. Add to bowl of baby spinach. Mix in pecans, goat cheese, turkey “bacon bits” and figs. Add 1-2 TBS of balsamic vinaigrette and gently toss (lightly coated). Serves 4.
