I’m of the mind that when you crave something, it’s your body’s way of saying, “Hey! I need _______ ASAP!” When I was in the hospital, all I wanted to drink was coconut water. Turns out, I was low on potassium and electrolytes, both of which coconut water is quite rich in.
Lately, I’ve been going nuts for all things pickled and fermented. I’m about ready to start guzzling my sourdough starter! Just kidding… sort of. Fermented foods are rich in digestive enzymes and probiotics, and may relieve everything from yeast infections to allergies to constipation. Sweet deal!
Kale salad with coconut-crusted tofu, kiwi, steamed potatoes and sauerkraut
Aside from helping the body function properly, I’ve been finding sauerkraut absolutely delicious lately. I went through almost a whole jar of the stuff in one sitting! It took me almost my whole 24 years to get on board the ‘kraut train, but now that I’m here, I don’t see myself hopping off of it anytime soon.
The below recipe is ridiculously easy to make… aside from the ‘kraut, I bet you have most of the ingredients in your fridge already!
SAUERKRAUT WITH CREAMY CARAWAY DRESSING
Serves 2
Ingredients
- 3 t whole grain mustard
- 4 T milk of choice
- 1/2 t caraway seeds
- 1 c. sauerkraut
- 2 handfuls spinach
Whisk first three ingredients together in a small bowl.
On two plates, dish sauerkraut on each handful of spinach. Drizzle with dressing. Enjoy!
