Today I have a bit of a different post for you, I've recently been getting really into cooking and have whipped up some yummy meals I never thought I'd be able to conjure up! So with that confidence I decided to jump in and get involved with baking, I was given a little nudge when I was offered some bits to review from Baking Mad, the cost of buying all the ingredients always seemed a bit too much of and put off for me as it's not at all cheap, but I was super excited to get browsing for some recipes and get baking!
First of all I had this idea of a beautiful victoria sponge with whipped double cream and a special layer of strawberry jam throughout...then I remember last time Ben & I decided to bake a cake, it tasted (and looked) like something you'd find in the middle of a field with the cows...So I looked for something more simple, I pretty much merged two recipes together and decided on the Simple Fairy Cakes, but instead of the traditional fairy wing design on top, we would do cupcake style (rebels eh!?). Off we popped to Asda and grabbed some cheap icing and decorations, oh and some mixing bowls and scales...did I mention we didn't have anything? But we are now set for any future cakes we decide to make without spending ANY money, yay!
WHAT YOU WILL NEED
150ml - Vegetable oil
2 eggs - (free range)
1tsp - Vanilla extract (we use Nielsen-Massey)
75g - Unrefined golden caster sugar (we use Billington's Sugar)
150g - Self-raising white flour (we use Allinson)
Step 1
Whisk together the eggs, oil & vanilla extract
Step 2
Add the sugar and flour mix until well blended
Step 3
Spoon the mixture into the paper cases and bake for 15-20 minutes until golden on top. Insert the tip of a knife into the cases and it should pull away clean if they're done
Step 4
Allow to cool on a drying rack

Then decorate as desired! Ben & Abbie's is on the left and mine on the right, I had far too much fun with the icing!
And ta-da! Some super simple fairy cakes! This recipe is so easy to do and take about 30 minutes altogether, perfect for the little ones to help out too, they can mix, help decorate and of course, eat them! No complicated ingredients, no fancy whisks needed, just adorable little cakes which is fun for all the family! :).
