Remembering Gran and Her Fritters

I loved growing up having my Gran, Mum’s mum, living in the same Brisbane suburb as us. It meant that we got to see her all the time, and therefore got to enjoy her special treats more often than maybe we should have. When talking with my brother, or our cousins, memories of Gran always include her love of cooking for us, her family.

There was always something special to be had around at Gran’s.

Now, Gran’s cooking was not at all like the usual bikkie baking that doting Nanas like to do, no, our Gran was a different kind of cook. She delivered her love to us in the form of unusual fare …… curries – made with a good dose of Keen’s Curry Powder and a handful of sultanas, swollen to the size of marbles ….. sweetly stewed apples bottled into recycled coffee jars and best served icy cold straight from the fridge. Ahhh, the memories!

But, the most favoured of all, were Gran’s corned beef fritters. And the other night, I cooked up a piece of corned beef so large, leftovers were guaranteed.

So for corned beef connoisseurs and/or fritter lovers, here’s a cracker way to use your left over meat (so make sure you buy a big one) ala Shari’s Gran ….

Make fritter batter

2 eggs, 1 cup of milk and 1 and a half cups SR Flour. Mix together well and add a pinch of salt if you wish.

Stir in other ingredients

  • hunk of left over cooked corned beef, diced into small pieces
  • finely chopped spring onions (or you can use a small onion, lightly pre cooked)
  • 1/2 tin creamed corn
  • 1/2 tin corn kernels

Heat oil in non-stick pan or give it a good spray

Cook fritters until both sides cooked through – like a pikelet but even better!

Dead simple and a delicious was to make an easy child-friendly meal from leftovers and cupboard ingredients! You’ve gotta love that, right?
