I bought a waffle maker last weekend so naturally that meant I had to attempt Paleo Waffles. It was a success! These were delicious! It’s a quick, easy recipe and absolutely satisfying.
Ingredients:
1 Cup Almond Flour
1/4 Cup Coconut Flour, Sifted
2 TBSP Apple Fiber
8 Eggs (Separate 4, egg whites beaten to stiff peaks)
1/2 TSP Sea Salt
1/2 TSP Baking Soda
2 TBSP Raw Honey
2 TSP Vanilla
2/3 Cup Coconut Milk
Directions:
In large bowl, combine almond flour, coconut flour, salt and baking soda.
In another bowl, add 4 whole eggs, 4 egg yolks, vanilla and coconut milk.
Combine ingredients.
Fold in half of the egg whites. Once combined well, fold in the remaining egg whites.
Pour on waffle iron and cook for about 4 minutes.
Serve with berries or your topping choice. Enjoy!
