Recipe: Clean Key Lime Pie Bites

Every other month I host Girl’s Dinner with two of my good friends.  We started doing this about 8 months ago when after several attempts we finally got together over dinner and wine at my apartment.  It had been forever since all three of us were together and as we enjoyed our evening, we vowed to do it every month, rotating houses and cooking responsibilities.  

We have done such a good job of not letting work or any other responsibilities conflict with our Girl’s Dinner evening.  It is also provides a good opportunity to try new recipes and hone our hosting skills as we play catch up!

On the menu last night I had mussels with a coconut milk and white wine sauce,  a gluten-free pasta dish and a surprise dessert.   One of my boyfriend’s favorite desserts is key lime pie, knowing there would be leftovers from dinner, I wanted to make a dessert that would make him happy as well!  Of course I wanted a clean version of the dessert so when I found this recipe from Run Hard Eat Clean, I went for it.   Even if avocados as key lime pie seemed a little weird to me. 

I don’t know if it is just me but when I find clean recipes, I often feel like they underestimate the measurements for the ingredients.  I read this and thought, hmm, two tablespoons of lime juice doesn’t seem like enough and neither does two tablespoons of  raw honey so I added more.  (Everything needs a little mkbing!)

Key Lime Pie Bites 

Makes 2 Dozen Mini Bites (Using a mini muffin tin) 

Filling:
2 Avocados
2 Limes* – juice from both (Warm in the microwave for 30 seconds and get so much more juice out of your limes!)
1/2 Cup Coconut Oil 
1/4 Cup Honey 

Crust:
1/2 Cup Almond flour 
1/2 Cup Dates  (Make sure you get pitted dates!) 
Pinch of Salt
Pinch of Cayenne

1. Blend all filling ingredients together. Set aside.
2. For the crust,  process dates, almond flour, salt and cayenne together until smoothish.
3. Press the crust into greased or lined muffin tins. 
4. Spoon in filling. Freeze for 1-2 hours. If it is too hard, let sit for 5 minutes and serve.
5. Enjoy!

These little bites were a success!   I tried to take a picture so you could see the crust as well because the dates with the almond flour really added a great flavor.
