It's amazing what a good night's sleep can do. I got over 8 hours last night and feel about a million times better already. I'm starting off my day slow and lazy with another attempt at whipped banana oats - much better this time with a slightly overripe banana! I topped it with all my favorites - blueberries, coconut, swirly chocolate chips, and raisins.
Banana Oats (adapted from katheats with slightly different proportions)
1/2 cup (50g) rolled oats1/2 cup water1/2 cup SoDelicious Coconut Milk1/2 a banana, sliced and chopped very smallsprinkling of chia seedspinch of salt
Combine the above in a small saucepan and heat over medium heat until liquid is mostly absorbed. Stir with a fork frequently to 'whip' (break up and incorporate) bananas.
I stirred in some vanilla and some cinnamon at the end as well.

Oh, my! That looks really delicious! I love my So Delicious coconut milk. It's the perfect replacement for dairy!
