Rabbit Hole Bourbon Review

Rabbit Hole Bourbon is interesting because it uses three different malts and no rye or wheat at all in this flagship bourbon. A bold and interesting move in a young distillery. I like the way they approached this which makes me wonder even more about the decision they made with their Rabbit Hole Rye Whiskey.

But for now we’re looking at this bourbon review. A bourbon with corn and three types of malt. Malt that makes up an astonishing 30% of the total mash. Not something you drink every day, but I’m excited to do so now.

In Rabbit Hole’s Words:

Bourbon is an act of faith. The barrel builds a strong foundation of vanilla and wood. Atop that, we bet on an unorthodox, four-grain mash promising spice and honey and a fresh apple breeze. When we first poked the thief into the darkness of the barrel, our faith was rewarded: a whiskey of remarkable maturity and self-possession, with spice on the front and custard in the finish.

Tasting Notes

EYE
Caramel

NOSE
Oka, dried dark fruit, caramel, spice, char and some cocoa and grassy notes.

PALATE
Oak, peanut brittle, spice, raw corn, caramel and some dried fruit and light herbal notes.

FINISH
Medium -> Caramel, corn, cinnamon, peanuts and oak.

BALANCE, BODY & FEEL
Ok balance, medium body and a soft feel.

a soft and easy basic bourbon. Would love to try this in a few more years as it continues to mature.

Rabbit Hole Bourbon Review: Overall and Score

The Aroma isn’t bad, it’s a pretty standard bourbon aroma that’s pleasantly sweet and not challenging; Palate is lovely in a basic sort of way, a simple easy sippin’ bourbon; Finish is a soft sweet and nutty fade that picks up a bit oaky at the end. It’s a really sweet bourbon.

It’ll be interesting to see how the Rabbit Hole Bourbon changes as it gets older. I imagine this unique mash bill will get better and better with age as it pulls on more oak and more spice and rustic tones to combat the sweetness. It might not be amazing right now, but I taste a lot of promise in this whiskey down the road.
