Quick and Easy Baked Apples!

Wow guys! You were all so into my building a wardrobe post. I’ve seen magazine articles on this concept tons of times and every time I see them I really want to try and do it. But, like most of you said, it always seems so overwhelming. Finding all the right pieces, in the right colors and patterns. It’s not as easy as browsing the racks and just picking out what you like.

But the rewards… I swear, it’s like having a magic closet. So many outfits! I’m in fashion bliss!

Last night Max came home from his business trip to Princeton, so we ended up hanging out and having dinner. I didn’t worry about blogging it all since I was just so happy to see him. He brought me a Princeton shirt so I can look all smart and Ivey.

This morning I made possibly the best oatmeal I’ve ever had!!!

I made a packet of instant Quaker Organic Maple & Brown Sugar oats in 1/2 cup hot water.

Then I added my quick and easy baked apples (they taste just like Thanksgiving!) and a dollup of cinnamon raison swirl peanut butter.

There isn’t a single grocery store in Salinas that has this stuff! It’s unjust. So Max made sure to bring me a jar since he flew into San Francisco. Isn’t he the best?! This is my favorite peanut butter.

Quick and Easy Baked Apples

Here’s what you need:

  • 1 apple (I like sweet ones for this like fuji or gala)
  • 1-2 tsp butter or margarine
  • 1 tsp brown sugar (or 1 packet stevia)
  • cinnamon to taste
  • 1 tsp water

Here’s what ya do:

  1. Core and slice the apple. I use one of those presses that slices and cores the apple all at once.
  2. Chop the slices into 3-4 equal cubes and put them in a small microwave safe bowl.
  3. Evenly dollup small chunks of the 1-2 tsp butter around the apples. Sprinkle the brown sugar (or stevia) and the cinnamon over the top. Pour the tsp water into the bowl.
  4. Heat bowl in the microwave on high for 1 minute. Stir the mixture and heat for another minute.

It’s exactly like apple pie!!!

Put these in some warm oatmeal and you’ll be in breakfast heaven!

Hello Mexican Food!

I wanted to fill my lunch with nutrients so I had the blackened shrimp tostada platter. When you get the platter you get guacamole (healthy fats) and rice.

Healthy Guidelines Checks:

  • 1 serving of green tea
  • 1 serving of probiotic
  • 1 serving of fruit
  • swapped for complex carbs (oats!!!)
  • 1 serving of healthy fats

Not too bad for lunch.

Afternoon Agenda:

Work ‘til 3:30pm

Hit the gym!!! I’m all rested up and ready to go!

make some tasty dinner
