Pink Lemonade Cupcakes

I haven’t had the time or energy to bake since around Thanksgiving.  I think it’s partially due to the fact that it makes such a mess.  Since I spend my days cleaning up after a Toddler, cleaning up an additional, although creative, mess just isn’t something I want to do.

I LOVE, LOVE, LOVE Pinterest.  I wish I knew where all of these creative & talented people got their gifts from {Please share!}. I have tried so many recipes, DIY’s & crafts from being “Pinspired”.  Some are successful, some fail miserably.  So to mix things up, I decided to post my “Pinspirations” that are successful.

I’ve had this pin on my pinboard for a while, but I was just too lazy to make from scratch.   I had a box of Pillsbury’s Moist Supreme Pink Lemonade Cake Mix hanging out in the pantry that I purchased a while back, so I thought I would give it a shot. Here’s my attempt.

Ingredients

3 eggs

1/3 cup vegetable oil

1 1/4 cups water

*Healthier options available on the package as well*

Pack of “bendy” straws.

Optional

Sparkling sugar {I used Festival’s Bling Bling Sparkling Sugar in Pink}

Food Coloring to make Frosting Yellow {I used Wilton’s Lemon Yellow}

Wilton Solid Color Sugar Sheets in Bright Yellow for decorating with a Cricut Cake Classic Personal Electronic Cutter {I scored mine at Big Lots for $99.99 & I LOVE it!}

Directions 

Cupcakes {per box}

  1. Preheat oven to 350 degrees.  Line 24 muffin cups with paper baking cups. {I fill mine pretty full so I usually only end up with 18}
  2. Combine eggs, oil, water & cake mix together until well blended.
  3. Divide evenly among muffin cups.  Bake about 15-18 minutes {it took me about 20} or until toothpick in center comes out clean.
  4. Cool completely on wire rack.

Frosting

  1. Combine Pillsbury frosting & Cream Cheese together until well combined {I use both to make enough frosting for us} with whisk attachment on Kitchenaid mixer.
  2. Add food coloring to frosting until you reach your desired shade {optional}.
  3. Pipe on cooled cupcakes.
  4. Add sparkle sugar {optional}.
  5. Cut straws, bend & place in the middle of each cupcake.
  6. Place cut out sugar shape & place on top {optional}.
  7. ENJOY!
