I’m always on the keen-eye hunt for new EASY-PEASY meals that can be added to dinner menu. The search criteria is pretty simple – nutritious, filling and able to be made by someone with limited (read that as negative, check) cooking finesse. I am proud to report though, that the new kitchen is seriously giving me huge confidence in the homemaker department and cooking motivation to boot. Now I am more eager than usual to expand my culinary attempts and consequently am making delicious discoveries along the way.
Kel from Mad Mummas Sweet Randoms led me to her blog and there I stumbled upon this deadset winner - Bacon, Chicken and Mushroom Pie. It. Is. Bloody. Beautiful. I’m telling you now to print it out and get cooking, seriously. Simple, tasty, filling and oh so warming on a wintry night. Mmmmmm.
Not too many ingredients and Kel’s instructions are easy to follow
- chicken (cooked BBQ or cook your own as I did)
- bacon
- mushrooms
- onion
- garlic
- mixed herbs (I just used Dill)
- a creamy sauce – melted butter, flour, cream and milk (though I used a long life 250ml cream and no milk)
- puff pastry
I had enough filling to make a regular sized pie for the MOTH (yes, he ate the lot) and two bitty ones for me – one for then and one for the freezer. Win.
I served the pie with fresh seasonal veggies and it made a satisfying and damn delicious dinner which is certainly going to find its way onto the table here regularly.
