Dinner at Ristorante VUN is one of theater at Park Hyatt Milan, comprising of suspense, anticipation, secrets and applause. It’s now over one month since my dinner at VUN and I can still see the images of Chef Andrea Aprea’s creations being brought to the table, and how I had to just pause while my eyes moved across the food, my fingers gingerly moving toward the plate. Not touching the plate, but visually moving over and around the dish, looking at colors, absorbing the visual texture of the ingredients on the plate, making sure that this memory is going to stay with me – before I taste the dish and its gone.

The initial surprise with each of Chef Aprea’s tasting creations is one of “ I did not expect this, how could I have been so blind,” by the time the secrets are released I have devoured them. Sitting at the next table was a business man from San Paulo Brazil, dinning alone he was also caught up in the moment as dishes were brought before him, then he was no longer alone. This guest was able to tell us that these dishes evoke memories of places, times and people he had forgotten, each time a dish was brought to him he smiled touched his plate, reflected and enjoyed.

The name of Restaurant VUN, which in Milanese dialect means “one”, has been chosen to express not only the close relationship with the city but also the ambition to arouse feelings and emotions to excel in the competitive world of gastronomy in Milan. This was our menu at VUN in March 2014 we explored, you may find some of these creations in the coming months, but do not forget this is Milan, which is always on trend as it is in fashion it is in gastronomy.

Chef Andrea Aprea begins with careful selection of raw materials, his style is based on experimentation and continuous research using his experience gained in the kitchens of the most important restaurants in Europe. It’s the experimentation that is so intriguing, Aprea challenges himself in his lab, challenges that have led to a cuisine that expresses great technical achievement, innovation and creativity, but always present in its origins that go back to the traditional Neapolitan culinary art.

Aprea also took it upon himself to address the design of VUE when he first arrive at Park Hyatt Milan, as he is an artist he is able to bring the total concept together, the design works well as it does not distract from the event at hand. VUE was fully booked when we dined there, we did not hear conversations from any table, the room is designed so well the sense of one but many is present, in this exclusive atmosphere that is, elegant and luxurious, it completes a culinary moment of high level.
