I have commandeered pancake day and turned it in to a pre birthday party party. So we shall dine on three courses of pancakes.
Here is the recipe I use year in year out (based on Delia's I think). If you buy that pre-made stuff, you deserve to be hounded down and battered (get it?). It really is simple. Its flour, eggs and milk. You can not get it wrong.
Pancakes - makes 12
You will need:
- 110g flour (make sure you sift the shit out of it)
- 200ml milk mixed with 75ml water
- 2 eggs
- 50g butter
- pinch of salt
Method:
Sift the flour and salt in a large bowl.
Make a well in the center and break in the eggs, whisk to incorporate all of the flour.
Gradually add small quantities of the milk/water - keep on whisking till the batter is smooooooooth.
Melt the 50g butter in a pan. Spoon 2 tbsp of it in to the batter mixture and pour the rest in to a bowl. Use a little of it in the pan each time you make a pancake.
Always do a test pancake. Use a ladle.
As soon as the batter hits the hot pan, tip it from side to side so it coats the base evenly. Flip. Cook for another couple of minutes - serve.
