Currently I am all about the Spring, the Spring, the Spring. And how can I not be. Yesterday it was +25 C in London and sunny! The trees have gotten all green in what seems like overnight. How is that even possible? To celebrate the Summer-like weather I just had to make this Pan-Fried Feta Cheese Salad for lunch as it looks and tastes like Spring to me. Why? It’s just something about the spices and herbs together with the salty feta and pink grapefruit. Yum!
Plus it’s super-easy and fast to make. It’s filling enough to have for dinner as well. Simple, easy and fast! That’s the motto for the Pan-Fried Feta Cheese Salad. Let the sun keep on shining and the flowers blooming!
Pan-Fried Feta Cheese Salad
Serves: 2
Preparation time: 30 minutes
Ingredients:
50 gr Rocket Salad
1 Pink Grapefruit
200 gr Feta Cheese
1 tbsp Olive Oil
1 tsp Balsamic Vinegar
1/4 tsp Dried Rosemary
Dash of Freshly Ground Black Pepper
1/4 tsp Dried Oregano
1/8 of Small Red Chilli
1 tsp Fresh Lime Juice
Directions:
Remove the seeds and finely chop the red chilli. In a small shallow bowl mix olive oil, balsamic vinegar, rosemary, black pepper, oregano, lime juice and chopped red chilli together. Cut the feta cheese into two equal sized pieces and roll the pieces in the olive oil mixture making sure they are evenly covered. Leave the feta pieces to marinate in the olive oil mixture for 15 minutes. Half way through turn the feta pieces around. Peel and segment the pink grapefruit. Equally divide the rocket and the pink grapefruit segments between two plates. Over medium heat fry the marinated feta on a frying pan for a couple of minutes whilst frequently turning it. When the tops of the feta pieces start to soften pour the rest of the olive oil mixture over them and transfer them on top of the rocket and pink grapefruit on the plates. If there is some olive oil mixture left on the pan, pour it over the feta pieces. Serve immediately.
