No Cake For Me

I can’t believe it! I am 18 days into the whole 30 program and going strong! My meals this past week have been pretty boring, looking something like this:

Breakfast: Eggs, Bacon, Veggies sometimes a banana

Lunch: Chicken and salad or kale with an apple

Dinner: Sweet potato, roasted veggies and some kind of meat…. chicken, taco seasoned ground beef etc.

I was a little worried about this past week because I was going out of town and would have to be a little more strategic with my planning! Plus, I would be passing up on birthday cake…. Luckily, we were just going to my moms and she was so sweet to accommodate to some of my needs.

Before leaving I packed a few Whole30 staples:

  • Coconut Oil
  • Sun Butter (used in moderation!)
  • Kale
  • other veggies
  • and some fruit

We were celebrating my youngest brothers birthday and my mom was making his meal of choice, lasagna, however, I dined on garlic chicken and roasted broccoli. One thing I hate about having strict dietary restrictions, is the feeling of being a high maintenance eater. I want to care about my health, but not be snobby about it! My loving family didn’t seem to mind that I was eating chicken and not lasagna though, so all was well.

My mom is really artsy and can make some beautifully frosted cakes, but Kyle wanted a cake with minimal frosting so she used this as an opportunity to try something new. She found a Chocolate Covered Oreo Cookie Cake. <—- original recipe here, and she made it her own! Not having a piece of this was almost torture, I reverted to picture taking to stay busy!

Sunday morning, before church, I got up and went for a run. Sunday was my long run day, and I was a little nervous about upping my milage, yet excited to be running through some new terrain. Changing up the scenery, always gives me an extra boost to complete my runs.

My mom’s house is located near a park and a nice bike trail so I took off with a general route in my mind. 5 miles was on the agenda and my first mile was on the slower side. I equate that to still being slightly asleep and a little on the sore side. With each mile I got a little bit faster, so it really made for an awesome run!

Today I am back in Wichita Falls and getting back to the regular grind of things! I have had a couple revelations about my future here in Wichita Falls, not exact answers, but reminders of some of God’s promises on my life. So, right now I am living in full expectation of greatness to come and completely submitted to the plans God has for me, as well as, for my future with a law enforcing husband!
