I love the tomato because, like the potato (which I also love), it is pretty versatile. You can eat it raw or use it in cooking. It can be fried, pureed, boiled, made into a sauce, carved into decorative shapes to add a touch of class to your yummy dishes, or eaten as it is.
When we have a bumper tomato harvest from our vegetable garden, I normally make homemade tomato sauce and ketchup. I also tend to love using tomatoes in most of the dishes I cook. I love a rich tomato sweet and sour sauce as well as a rich tomato pasta sauce.
Even our canine babies love tomatoes (though I only give them the really ripe ones as green tomatoes are bad for canines).
So here's to the delicious vegetable fruit or fruit vegetable, the tomato -- one of my favorite things ;)
