So I wanted to write a few suggestions for mothers day. As easy as it is to take your mom out for dinner, it’s a day to make her feel special. So perhaps going to the effort of cooking her something special will make her feel spoilt rotten. I’ve come up with a few different menu options depending on how confident you may be in the kitchen. Neither option is particularly difficult, if anyone wants recipes for any of the dishes just mail me and I’ll put them up.
♡ Option 1 – Breakfast
Serve a bowl of fruit salad, slice some croissants with smoked ham and cheese melted in the middle and a big pot of either tea or coffee. If this is being served more as a brunch you could add some sausages, grilled tomato and mushrooms. This should keep you going until dinner!
Option 2 – Extravagant Lunch
I’d do a leg of lamb, roasted over some potatoes with some green beans and a bag of spinach slathered in french dressing. You could do a pineapple upside down cake for pudding, serve with a jug of custard. If your going all out for your mum, serve her favorite cocktail. If you need some suggestions, I’d probably go with a gin & tonic or martini.
This takes a little preparation, but once your prepped your good to go. Time your mom to arrive just as the lamb is resting and enjoy your cocktail as it does. The cake can be made earlier in the day so its ready to serve.
Option 3 – Purse Friendly Dinner
Start with bruschetta and your mums favorite wine. These are really easy to make, you only need some nice tomatoes, basil, baguette and good olive oil. For mains I would go with a pot of homemade meatballs, made with fabulous tomato sauce and pork and ricotta meatballs. Serve with fresh pasta (a little more expensive than dried, but it is mothers day). For pudding, serve affogatto, a scoup of vanilla ice cream in an espresso. If you’ve never had it it’s fabulous!
