Last week we built a recipe on my Nutri-Savvy FB page, starting with: CORN. Our weekly game is called: “BUILD-A-RECIPE Monday”. Each person adds an ingredient until, well, we have enough. You never know which direction the recipe is going and there are so many options. Tovah Terranova was ready to take on the challenge and here’s the awesome dish she came up with:
Mexican Mash Up!

Main Dish in less than 20 Minutes!
Ingredients:
- Corn
- Ground beef or Ground beef substitute*
- Black beans
- Tomato
- Cilantro
- Kale
- Avocado
*Ground Beef Substitute: Raw Sprouted or Cooked Quinoa.
Directions:
Add 4 cups cooked quinoa as directions indicate. Usually for about 15 minutes.
Mix corn, black beans, diced tomato, cilantro leaves, 1 diced small red onion, & 1 clove crushed/minced garlic.
Destem, massage (to break down the toughness & enzymes) then shred or mince kale.
Then add to mixed ingredients.
Add cooled quinoa.
Add 1-2 whole avocados diced.
Seasoning:
Mix Wet Ingredients in Separate Bowl:
1 Cup Rice Wine Vinegar mixed with 1/4 Agave
1 Whole Lemon Juiced to keep Avocado from browning.
Then add:
1 Tbsp Sea Salt or Celery Salt for low sodium
1 Tablespoon Pepper
1 tablespoon Mexican Seasoning
Mix gently.
Add atop warmed garlic naan for a most delectable vegetarian lunch or throw on top of your favorite simple salad to add a little flair!
Gluten Free? Stuff a red cabbage or romaine leaf & enjoy!
