I celebrated not eating meat for one whole month by making one of my favorite meatless dishes - Miso Kelp Noodles. This recipe is good enough for two hearty servings so I made one dinner and one for lunch the next day.
Ingredients:
- kelp noodles (got mine from Commonsense Organics but also available on iHerb)
- kale
- red onion
- avocado
- red onion
- coriander
- peanut butter
- miso paste or instant miso powder (whatever you have in the pantry!)
- sesame oil
- pumpkin seeds
Steps:
1. Rinse and chop veges.
2. Rinse kelp noodles and cut if desired.3. Make a creamy dressing by combining peanut butter, miso paste and sesame oil.
4. Sprinkle pumpkin seeds and coriander. Serve!
