I celebrated not eating meat for one whole month by making one of my favorite meatless dishes - Miso Kelp Noodles. This recipe is good enough for two hearty servings so I made one dinner and one for lunch the next day.

Ingredients:
  • kelp noodles (got mine from Commonsense Organics but also available on iHerb)
  • kale
  • red onion
  • avocado
  • red onion
  • coriander
  • peanut butter
  • miso paste  or instant miso powder (whatever you have in the pantry!)
  • sesame oil
  • pumpkin seeds

Steps:

1. Rinse and chop veges. 

2. Rinse kelp noodles and cut if desired.
3. Make a creamy dressing by combining peanut butter, miso paste and sesame oil. 
4. Sprinkle pumpkin seeds and coriander. Serve!
