{Mini Apple Pies}

As apple season draws to a close, the question is what to do with all of those apples that you have left over? My boyfriend's wonderful parents brought me some yummy apples from their anniversary trip to the mountains. I have definitely enjoyed them. Putting them in some mini apple pies was a great way for me to enjoy them even more! 
To make the mini apple pies, you're going to need:-1 cupcake tray-anti-stick spray

Crust:-3 cups of flour-1 cup of vegetable oil-a teaspoon and a half of salt-2 teaspoons of sugar-2 tablespoons of milkFilling:-Chopped apples (I used 3) -2 cups of white sugar-a teaspoon and a half of cinnamon-a pinch of nutmegPreparation.

  • Preheat the oven to 400 degrees on bake. 
  • Mix together all of the ingredients for the crust.
  •  Now separate into two separate balls of dough. 
  • Set them aside.
  • Mix together everything for the filling so that the apples are covered all over.
  • Spray the cupcake tray with anti-stick spray.
  • take half a palm sized ball of the dough in your hand and press it into one of the cupcake spots. Repeat until done.
  • Bake the bottom crust for 8 minutes or until light golden brown.
  • Take them out and let them cool for 3 minutes.
  • Now scoop in the filling. Repeat until all are filled.
  • Take the remaining dough and press it over the top of each mini pie. Make sure it's sealed.
  • Take a fork and press the tongs around the edges of the mini pies. 
  • Poke a few holes in the top center for ventilation.
Baking:Pop the mini pies in the oven and bake them for 20 minutes or until a light golden brown.  (some ovens may take less time)Enjoy your pie baking! xo
