I finally found a use for that millet that's been hanging out in my pantry since my first try with it! I tried the millet muffins from Super Natural Every Day and they are AMAZING. If you love cornbread, you'll love these - and they're naturally sweetened with honey which is even better. I made them for a chili cook off at my work but now I kind of want to keep them! I couldn't resist at least taste-testing them (with some raspberry rhubarb jam).....
And I can even refer you to the recipe since it's in the sampler that was put out promoting the cookbook! I highly recommend this book, everything in it looks great and my first few tries have both tasted amazing even if one wasn't as filling as I'd hoped.
