After the holidays I get back on a healthier track by adding super slender meals like this Mexican chopped salad to my days.

I'm not a big fan of keeping the holiday treat pounds I gained for too long. It just makes it harder to melt them off.

To that end, last week I thought I would share the breakfast recipes that make my list when I'm looking for a calorie friendly start to the day, then this week lunch ideas like this turkey wrap filled with chunks of turkey breast, grapes and apples.

These past few months, my day job has been a flurry of setting up computers at schools in my school district. I'm an Apple technician, and every few years we buy new computers for students and staff. With 32 schools, it takes several months of traveling from school to school to get the job done.

Packing a healthy lunch is critical to my holiday weight loss goals - our schools are very generous with treats.

Being the devotee of all foods Mexican, and needing a meal that doesn't require anything but a lunch bag cooler, I whipped up this easy chopped salad packed with Mexican spices, black beans and avocado.

Lime juice adds zing to this fresh wrap, and black beans give me enough oooomph to get to the end of the day with teachers and students happy and playing with their new computers.

Next week I'll serve super slender dinners, that also make super slender lunches if you aren't at schools and have a microwave on hand.

Mexican Chopped Salad Wraps with Black Beans and Avocado

Recipe type: Salad, Sandwich, Wrap

  • 1 can black beans, rinsed and drained
  • 1 can diced green chiles
  • 1 large green pepper, chopped
  • ½ cup red onion, diced
  • 2 large roma tomatoes, chopped
  • ¼ cup cilantro, chopped
  • ½ tablespoon chili powder
  • ¼ teaspoon cumin
  • 1 ½ medium avocado, seeded and chopped
  • 2 tablespoons lime juice
  • hot sauce, add to taste
  • salt and pepper to taste
  • 6 large whole wheat tortillas
  • 12 tablespoons low fat cheddar cheese, shredded
  • 6 tablespoons low fat sour cream
  1. Combine all ingredients in a large bowl except whole grain wrap, cheddar cheese, and sour cream.
  2. Serve on tortillas with cheddar cheese and sour cream.
