Mango Yoghurt Parfait

As summer arrive, one fruit that always has a special place on our dining table are the fresh and ripe Alphonso Mangoes. From peeling to licking the juices down our elbow, alphonsoes does evoke a lot of childhood memories which we love narrating to your 3 year old as we take a bite. Although we love eating the fruit as is, I am always experimenting with the recipes that involves innovative use of mangoes yet is visually pretty (because children are attracted to it), healthy for my family and easy to whip up. Mango Parfait is one contemporary twist to a cheesecake that is an ideal sunny day day dessert or can be eaten for a breakfast because it is light and have excellent cooling properties from yoghurt yet not having to worry about the extra calories from the cream cheese. This is a no-cook, no-fuss, perfectly versatile recipe which can be adjusted with any seasonal fruit and can make quite an impression in a party. I prefer using Philips Food Processor for crushing the biscuits into crumbs and Philips Kitchen Machine for whisking the curd and cream to smooth texture as is required for the recipe than having to exercise my arms in whipping with a hand. The Philips appliances have helped me in reaching the right consistency and made the work even more easier!

It is amazing how your children can help you with assembling the layers of the parfait which in turn also get their creative juices to flow. It isn’t challenging at all once you keep the ingredients in front of your kids and allow them to use their imagination in filling the glasses as they desire. It gives them a boost of confidence when they see their finished product being enjoyed by all so dearly.

This recipe was inspired by Beela Bake’s Blueberry Yoghurt Pots where she used mascarpone cheese as a filling. I have tried her recipe in Ramadan several times and it was a hit at many Iftar parties I threw at home. This time around I decided to change mascarpone with yoghurt and blueberry sauce with mango pulp and it blended so great, my little one ask me to prepare it every now and then!

Mango Yoghurt Parfait

  • Servings: 5 small glasses
  • Difficulty: Easy

Ingredients :

(Servings – 5 small glasses)

  • 1 cup, Digestive biscuits
  • 2 tbsp, melted butter
  • 1 ½ cup, hung/thick yoghurt
  • ½cup, Double cream or whipping cream
  • 1 ¼ cup, Fresh mango puree
  • 1,mango (cubed)
  • ½ tsp, Vanilla essence
  • 1/3rd cup, powdered sugar
  • Few Pomegranate pearls, for garnishing (optional)

Method –

  1. Using Philips Avance Food Processor, whizz the digestive biscuits and melted butter until the mixture resemble coarse crumbs. Keep aside.
  2. In a bowl of Philips Avance Kitchen Machine fitted with a whisk attachment, place hung yoghurt, cream, powdered sugar and vanilla essence. Beat at a speed of 6 for a few minutes until the ingredients are well incorporated and form a rich consistency sauce. Fill the mixture in a disposable piping bag and keep aside till further use.
  3. Now that we have all the ingredients ready ask your children to help you in assembling them in the serving glasses. Let them line the bottom of the glasses with biscuit mixture, up to an inch from the bottom. Using a piping bag (or with a spoon) allow them to fill the yoghurt-cream mix, top with mango puree, mango cubes, biscuit mix, yoghurt and more mangoes. Garnish with pomegranate pearls.
  4. Repeat for other glasses.

Note: Instead of serving them in individual glasses, you can also serve Mango Parfait in a large bowl or a trifle dish.
