Mama Appleyard's Chicken Curry
Ok, so this recipe wasn't actually created by Mum, but all good art is stolen from somewhere, so she claims it. The original recipe was actually made by Annabelle White on Good Morning. Either way it's a crowd pleaser.  I'm going to shock the masses here. I'm not big on Indian food. I decided to tell G Bear this as we were in the air, on route to India. She felt this was something that should have been discussed prior to the trip. Anyway, I like this curry. I love this curry! It isn't too rich, it's delicious. 

Ingrediants


2 sliced onions oil 4 Tbsp curry powder 3 Tbsp tomato paste 2 Tbsp white vinegar 2 cloves crushed garlic 1 Tbsp finely chopped fresh ginger 1 kg chicken thigh meat, roughly chopped (bone out, skin on) 1 cup chicken stock 1/2 cup coconut milk 3 heaped Tbsp freshly chopped corriander natural unsweetened yoghurt

Method


Saute the onions in oil until soft and translucent. Add curry powder and stir. Add tomato paste, vinegar, garlic and ginger. Cook until it is dry, then add the chicken meat, cover and cook on a low heat. 
Stir frequently and add chicken stock.
When chicken is cooked add coconut milk and simmer on low heat for 10 mins.
Taste and add salt and pepper and fresh coriander before serving.
Serve with jasmine rice and a spoon full of unsweetened yoghurt.
