Malted Chocolate Cupcakes

Anyone who knows me well knows that I love the just love the juxtaposition of tastes. Sweet and sour, hot and cold and I just love what malt does to chocolate. I’m not overly fond of sweet flavours as a whole but malted choxolate is one I can handle. You could use ovaltine here but I’d recommend horlicks. Ovaltine already has chocolate added so you’d be messing with the balance of flavours bit thats on your head!

For this you’ll need:

♡ 240ml milk
♡ 30g malt drink powder (I used Horlicks)
♡ 80g butter, softened
♡ 240g caster sugar
♡ 200g self raising flour
♡ 40g cocoa powder
♡ 2 eggs

For the frosting:
♡ 500g icing sugar
♡ 60ml milk
♡ 30g malt drink powder
♡ 160g softened butter
♡ 2 packs of maltesers

1. Preheat your oven to 180° or 160° fan assisted and line a muffin tin with paper cases.

2. Add all the ingredients to a bowl and mix well.

3. Dispense between the 12 cases and put into the oven for about 20 minutes. Check them after about 16 minutes. A skewer should come out clean.

4. Once done remove from the oven and allow to cool on a wire rack. To make the frosting combine all the ingredients for the frosting in a bowl and mix well until fully combined.

5. Transfer to a piping bag and pipe the icing onto the cakes. Decorate the tops with the malteser balls.
